FRUGAL DINNER CHALLENGE

With the onset of my recent membership to the unemployed elite...I have been challenged with being frugal and creative with cooking.

I decided to challenge myself to prepare dinners for the family with a target of no more than $2.00 per person.

Thank the good Lord that I've honed my penny pinching skills and He has blessed me with a creativity and ingenuity...

TONIGHT'S DINNER:

"Flat Stanley"* Enchilada Casserole and Refried Beans.

1 Can of Red Enchilada Sauce
2 lbs of ground chicken
1 package Kraft grated cheddar cheese
14 corn tortillas
1 can of refried beans

Total Cost: $5.36 /3 = $1.78 per person

*yes, there is a story behind the name
